Our curry night in 2018 was a great success, we had a fun evening sharing some Sri Lankan curry, learning how to cook a curry and hearing Bally’s testimony. Many of you wanted the recipe so here is the recipe for Bally’s chicken curry!



  • 750g Chicken thighs

  • 1-2 tsp Chilli Powder

  • 2 tsp Sri Lankan Curry Powder

  • 1/2 tsp Ground Pepper

  • 5-10 Curry Leaves

  • 2 inch long Pandan Leaves

  • 4 pods Cardamom

  • 1 inch long stick Cinnamon

  • 4 Cloves

  • 1/2 tsp Turmeric

  • 1 Onion

  • 2 Garlic Cloves

  • 1 tsp Ginger Paste

  • 1 large Tomatoes

  • Salt & Pepper - As required



  1. Add the curry powder, chilli powder, turmeric, salt, and pepper to the chicken, mix well and leave to marinade for 30 minutes.

  2. Chop the onion, tomato, garlic.

  3. Add some oil to a large pan and fry the rest of the spices being careful not to burn them. Add the rest of the ingredients, letting it cook for 5 minutes.

  4. Finally add the chicken and cook on a medium heat until the chicken is cooked through.
